In this brand new vegetarian session, award-winning modern chef and cookbook author Eddie Shepherd teaches you some of the gourmet restaurant tricks of the trade, so that you can make your dishes zing with flavour and look beautiful. You’re not just learning 2 recipes – the techniques in this workshop are highly adaptable to all kinds of dishes.
This workshop is suitable for vegetarians, vegans and individuals who follow a gluten-free diet.
First up – Tofu Laksa with Seasonal Greens – learn to make this rich, thai spiced rice noodle dish using seaweed, for an authentic flavour of the sea and bags of umami. This recipe is easy to adapt to use different seasonal offerings and is full of useful techniques to apply to other dishes. Learn some tricks with tofu and how to use use kombu in a simple way to help make all kinds of dishes more delicious. Vegan and Gluten Free
Followed by – Orange & Olive Oil Chocolate Pots with Cinder Toffee – Indulgent dark chocolate pots flavoured with orange and enriched with olive oil. Learn how to use soy milk to make emulsions and how to make a set ganache without using cream. Learn how to make delicious cinder toffee. As a final visual flourish, Eddie will demo making a quick fresh diced orange gel using agar, to top the dish off (and if there’s time you’ll be able to make one yourselves) – a really useful technique for making vegetarian gelees.
