As the sun comes out, we turn away from rich, full-bodied wines into lighter styles more suited to the current (and very welcome) summer climate. With so  many countries producing superb styles of wine, join Sam's to look at the ones that face up to the challenges of the salads, the barbecues or simply the evening on the terrace!

A salad of marinated prawns served with a crispy home-made crab cake

Wine making guru Jean - Marc Lafage unlocked the amazing vinous potential of the French side of Pyrenees & made this beautiful vibrant & pithy Picpoul. It is packed with flavours of citrus & tropical fruits, & has minerality with a clean & fresh finish.
 
Chicken Leg Ballotine
 
A pistachio & bacon stuffed corn-fed chicken leg sliced onto a summer garden salad
 
Cuatro Rayas, Agricola Castillana, Castilla y Leon, Spain 2011
 
A Sauvignon Blanc from Castilla y Leon with a clean & powerful nose & fruity, herbal palate. This example of a Spanish star is an alternative to a New Zealand Sauvignon Blanc with pronounced flavours of lemon, grapefruit & peach. Agricola Castillana, the largest Co-operative in Rueda is famous for producing the most outstanding Verdejo & Sauvingon Blanc.
 
Pan-roasted Cod Loin
 
Butter roasted cod loin served with baby onions, confit tomatoes, wilted greens, potato & hazelnut dumplings
 
H Rosé de L'Hospitalet, Vin de Pays d'oc, Languedoc-rousillon, France 2011
 
A Grenache rosé with refreshing & juicy red fruit flavours. This is a dry wine with raspberry & black cherry aromas & the palate of real character. Fresh & fruity with crisp acidity on the finish. Gerard Bertrand, a former professional rugby player for Stade Francais & the French national team,  now runs the family jewel in the crown which is L'Hospitalet.
 
Strawberries & Cream
 
Strawberry jelly with a set vanilla cream, strawberry crisps & meringues with a mint granite
 
Château du Seuil, Cérons, Bordeaux, France 2009
 
A small estate of 25 hectares producing wines from an average vine age of 30 years, now in full process of conversion to an organic certification. A late harvest botrytis wine with rich concentrated flavours & a great level of acidity which leaves the palate clean & dry with a fresh finish.
 
Coffee & Petits Fours
 
Ellanos coffee made from sweet Brazilian, smooth Indian & bright Central American beans resulting in a sweet aromatic taste served with vanilla fudge & chocolate ganache.
