Fortant de France, Terroir Littorel Merlot Rosé, Pays d’Oc 2012
A perfect coral colour is achieved by carefully straining the juice from the skins of the red grapes. This wine has a beautiful strawberry, blackcurrant & raspberry flavour.

Mullet & Mussel Soup
Red mullet & mussel soup served with a saffron & garlic mayonnaise
Fortant de France, Reserve des Grands Monts Chardonnay, Pays d’Oc 2011
The grapes for this rich & full bodied Chardonnay come from 30 year old vines grown at an altitude of up to 400 metres. The effect of two Mediterranean winds prolong the ripening of the grapes, but ensures they have an excellent flavour.

Glazed Goats Cheese
Served with poached pear, walnuts & roasted beetroot
Fortant de France, Reserve des Grands Monts Carignan, Pays d’Oc 2011
80 years old Carignan is harvested at a very low yield & is also grown in a
high altitude area. It is a fantastic grape that develops rich flavours of
red fruits on the palate.


Confit Duck Leg
A slow cooked duck leg served with a spiced sausage,
vegetable & white bean cassoulete
Fortant de France, Terroir de Collines Cabernet Sauvignon, Pays d’Oc 2011
Often found in its native Bordeaux, Cabernet Sauvignon is grown in the warmth of Southern France.The wine displays classic characteristics of blackcurrant cedar wood with a touch of vanilla spice.

Prune & Armagnac Tart
Served with praline ice-cream
Fortant de France, Terroir de Collines Pinot Noir, Pays d’Oc 2011
Hillside vineyards are where this Pinot Noir is grown, which creates ideal conditions for this rather fickle grape variety. A brief maturation in oak barrels gives the
expression of elegant blackcurrant & black cherry fruit flavours, with spicy notes
& a smooth finish.

Coffee & Petit Fours
Ellanos coffee made from sweet Brazilian, smooth Indian & bright Central
American beans resulting in a sweet aromatic taste served with macaroons
& home-made chocolates
