Local seasonal and low-carbon chef Jules Bagnoli will show you how to get the best out of British ingredients from the here and now.
You’ll use produce plucked straight from the ground to cook a mouth-watering meat dish of sumac-spiced lamb with roast garlic and red onion jam and dill yoghurt on an oat pancake with fresh pea shoots and spring leaves and a delicious veggie option of pan-fried Cheshire asparagus with samphire and chickpea fritters.
Jules Bagnoli ran two celebrated Michelin-listed restaurants before becoming an urban farmer and permaculture designer. Down-to-earth foodie Jules’s determination for sourcing over 90% truly local food for her pioneering sustainable restaurant back in 2004, has led her on many strange gastronomic foraging missions, from rabbits on roundabouts to nettles and marigolds. Suffering from the vagaries of food supply under climate change, Jules eats fish from her own home farm, hydroponic salad from an upcycled shipping container, and rescues landfill from unlocked supermarket skips.
